How to Oven Roast Asparagus
 I love to oven roast asparagus to bring out the full, sweet and savory flavor. Since the season here runs April through July,I eat it as much as I can while it’s here! I have an older,more established Asparagus bed, so we are able to eat it about once a week. I love how fresh it is right out the garden and it’s so easy to cook! It’s actually one of my favorite vegetables prepared this way.
To oven roast Asparagus:
Pre-heat the oven to 400 degrees. Toss the trimmed spears with Olive oil and Sea Salt.
On a baking sheet lay them flat, spear pointing the same direction. It helps if you need to turn the tray to cook them evenly, also,this will help with turning them later. Place them on the middle rack, checking on them periodically. The cooking time depends on the thickness and size of the spears. I normally start checking on them after the first 8-10 minutes until they are ready to turn.
When the underside of the asparagus starts to brown, use a set of tongs to turn the spear over. This will give them a uniform color all the way around, and give it that toasty goodness. The second side browns much faster and will need to be checked sooner.
Once both sides are browned, remove them right away. If you leave them in too long, the tips of the spears can easily get too dark. For me, these are the best roasted part so you don’t want them burned!
Let cool a bit and enjoy! There is something about the outside slightly crisp nuttiness, and tender inside that I just love. Lots of times, we’ll roast these and eat them right out of the pan! Because they are also super yummy with some fresh lemon juice squeezed on top, or a creamy dressing, it makes it really versatile! We also love to put these on flat breads, and tossed in pastas.

On a toasted french roll, spread the rustic whole seed mustard .Place sliced ham,Gruyere (or swiss) cheese,
and roasted Asparagus spears slivers. Finally,you can make it even more delicious by warming the sandwich just enough to melt the cheese!
