Heart-shaped pie crust cookies

I have a great recipe for you today using Chocolate and pie crust cookies. I have to say that chocolate is one of my guilty pleasures. I love making little treats for the family, but sometimes I want something that isn’t overly sweet.I’ve seen other similar recipes, but this is the one we’ve always used.
We have never been big “go out” people for Valentine’s Day. We really prefer making a nice diner and then a little treat for the family. I wanted to share this recipe for pie crust cookies with you. I love it because it uses ready-made pie crust which has a great flaky texture, chocolate and jam. You can use pre-made sugar cookie dough, and milk chocolate instead of pie crust if you like it a bit sweeter. I used ready-made pie crust from Trader Joe’s.

Roll out your pie crust and use a heart shape cutter for your cookie pieces. You can really make these year round and use any shape cookie cutter. Stars for the Fourth of July!

Place onto a baking sheet according to directions. I baked mine at 400 degrees until they were lightly browned on the edges, about 8-10 minutes.I love to use my baking stone because it bakes everything so evenly.

While that is baking, melt your chocolate. If you like it sweeter though, I would use milk chocolate. The bittersweet can be kind of hard core. 🙂

I like to melt mine in the microwave at 30 second intervals. Once it’s melted pour onto aluminum foil (be careful, it will be hot!) and spread thinly. Put into fridge on a flat surface to harden.

Let the pie crust hearts cool, and try not to nibble on any while you are waiting.

Once the chocolate is set (but not super hard to where it snaps), use the same cookie cutter to cut the chocolate into heart shapes.

Place the chocolate hearts on top of the pie crust hearts, and add a top.

Drizzle with more melted chocolate!

For a variation, and to add more sweetness and a more pie-like flavor, use jam instead of chocolate in the middle.

Then drizzle with melted chocolate! Each pie crust makes approximately 12 sandwich cookies.

Enjoy!
